I'm making some progress.
I know have an image uploaded via Appearance/Header. The image dimensions are 1060x120 and the image doesn't populate the outer edges on both sides. The header image is centered, 1060 width and then the header background is grey on each side.
How do I get the colors to continue on each side of the header image?
I have noticed that the TOP button has changed from the word TOP, to RETURN TO THE TOP. Anyway to just make it say TOP only?

Shortcodes? I'm not sure how to manipulate/customise these for my purposes. Am I limited to shortcodes or can I put in something like:

BTW the settings page for Genesis Simple Edits has a dead link to "more comprehensive shortcode usage guide"

Actually, I'm not following what you say. I can't see “Footer Credits Text” or a box that says,”Footer Output“ anywhere in the Footer Hooks area or Genesis Simple Hooks.

I removed both Simple Edits and Simple Hooks plugin and it is now at the themes defaults.
It is a tricky one because Outreach has a custom TOP arrow that I want to keep, but want to change the CREDITS ONLY.
If anyone knows how to edited the footer credits ONLY, (I want to keep the themes custom TOP arrow) that would be great.
ok that completely broke ALL footer information. I won't be using that Simple Edits. Thanks anyway anitac.

It works and aligns left if I use the code fro this page: http://www.studiopress.com/plugins/simple-hooks
but it still removed the Outreach Themes TOP arrow that I want to retain.
