Try decreasing your padding.
The setting of
100px 0
means there is 100 pixels padding on TOP and BOTTOM of the element and 0 pixels on the LEFT and RIGHT of the element.

James ChaiMemberNo matter the theme you migrate to you would have to consider end-goals that are particular to you.
Such as what design changes do you want to make? What feature/function (development) changes do you want to make? What is necessary to keep, what can you let go? Etc ...
IMO: I suggest backing up your ENTIRE site, pick a new theme that you like, and develop locally. This way until things are back the way you want them to be you have a FULL backup and can always start over - with the migration/update that is.

To alter/edit the gray change rgba(0,0,0,0.2) to something like rgba(255,215,0,0.2) ... You would have to update ALL rgba elements.

James ChaiMemberYou can customize ANY child theme to suit your needs, granted it requires coding knowledge (what level depends on what you want to customize).
And yes you can remove/replace the 'widgets' used in the DEMO ... they are merely placeholders meant to give you an idea of how you can utilize the child theme.

James ChaiMemberAssuming you are using Genesis - when you add a 'Featured' post/page widget you are given the option to show a Featured Image.
Depending on the child theme you can also align and select image size.
