The 404 page is a template that you can copy from the Genesis directory into your child theme directory to customize as you desire. Also, the Genesis sitemap uses the genesis_sitemap_output filter to filter posts. This explains how to use the filter: http://victorfont.com/genesis_sitemap_output-filter/.
The filter use wp_list_pages to display the pages. You can exclude specific pages like the thank you page. This explains how: https://developer.wordpress.org/reference/functions/wp_list_pages/

Have you requested your free website audit yet?Victor FontModeratorThat's the wrong place to put it. The header hook will load the image just before the closing header tag after the rest of the header content. Insert the header image in the header area as I explained in my earlier post.
The image is a little large at 500px ?— 180px. You'll have to change the size in functions.php. Modify the following at line 42:

You may also have to adjust the CSS to accommodate the larger image.

Have you requested your free website audit yet?Victor FontModeratorI'm not sure how you accomplished it, but the logo is positioned after the header right widget area instead of in the title area where it belongs. That's why the display is as it is. The logo should be added through the Appearance/Header menu or through Appearance/Customize/Header Image.

The background image is behind it. You either have to remove the background-color or change it to something with a little transparency. background-color: rgba(0,0,0,0.3);

It's a little complicated to do you what you want because you need to create your own custom function to replace the WordPress functionality. The whole reason for this is because the WordPress function creates inline CSS. All we have to do is add :not(.home) to the CSS, but to get there, you have to do the following:
Find add_theme_support( 'custom-background' ); in the Outreach Pro functions.php and replace it with the entire block of code below. I've tested this with Outreach Pro in my local environment and it works. Be very, very careful editing functions.php. If you make a mistake, it will bring down your site and you will have to correct it through FTP. FTP is my preferred way for editing the functions file.

Have you requested your free website audit yet?Victor FontModeratorFor the original poster's site, the issue comes from the Lato font you are using. The Lato font doesn't support the special characters correctly. You can test this yourself by removing Lato from the font-family line in the body CSS.
Before: font-family: 'Lato', sans-serif;
After: font-family: sans-serif;
