I’m trying to create a category blog page. I’ve found Brian’s tutorial (http://www.briangardner.com/blog-page-single-category), however for some reason there are no “custom field” options on the WP Page set-up.
Is there another way to create this?

Two more questions…
1) Is there a way to add a blurb/text above the posts? Right now, I have text within the page, but it isn’t appearing. Only the category posts.
2) How do I set it so that category posts appear in excerpt format?
1) You can add the category to your menu and add archive intro text in the Categories panel otherwise if you are using the blog page template you would need to add it through a function added to functions.php with conditional tags.
2) That setting is in the Content Archives section of the Genesis settings panel.
